Bananna Mango Bread
I adapted this recipe from one in my Black & Decker instruction manual -- the original recipe called for apple sauce and granola. Ingredients:
- 1 cup unsweetened apple juice (other varieties would no doubt also be tasty)
- 2 over ripe bananas
- 2 Tbsp. shortening
- 2 Tbsp. honey
- 1 cup whole wheat flour
- 3 1/2 cups bread flour
- 1/2 cup unsweetened rice crispies
- 1 tsp cinnamon
- 1 3/4 tsp bread machine yeast
- about 1/2 cup roughly cut dried mangoes (scissors work very well)
Mash or hand blend apple juice with bananas Settings: sweet bread, light or dark crust Place ingredients into pan in order listed, except mangoes, press start. When machine beeps add mangoes.
Comments:
I have discovered that if your bread appears to be rising too high, you can gently punch it down, thus avoiding a collision with the lid, you can do this several times. You can buy dried mangoes in asian food stores, health food stores or in the bulk section of a well-stocked grocery store.
